    Sometimes we come across a sample that just blows our minds. This year’s TOPO is one such coffee. It is a natural processed* coffee from Montecillos, Honduras, and it’s simply exceptional. Notes include: Strawberry, black currant, blueberry, red grape, sweet cream, brown sugar, dark chocolate.

    *Natural process coffee (or “dry process”) is a traditional method where freshly harvested coffee cherries are dried whole in the sun, with the fruit and skin intact around the bean. This extended contact allows the seed to absorb natural sugars from the fruit.

    . It’s perfect for cold mornings in the mountains, and makes a fantastic cold brew. It’s an easy coffee to fall in love with. No pretense. Not too light. Not too acidic. Just solid, delicious coffee.

    While most of our coffees lean towards medium roast to lighter style, this coffee is dark. We wanted to offer a coffee that is every bit as ethically sourced as the rest of our coffees, with a focus on being organic, traded fairly, and roasted with care, but cater to those that crave something on the darker side of things.     Smooth, delicious, natural processed coffee from the Yirgacheffe region in Ethiopia. Sweet candy, strawberry, milk chocolate, and a mild pineapple acidity.

    This is a lighter roast coffee, but it has a full, rich body, has just the right amount of acidity without being too much, and makes an incredibly satisfying, delicious cup of coffee. Even if you don’t lean into lighter coffees, this one is worth trying.

    Campesinos Ecológicos de la Sierra Madre de Chiapas (CESMACH) farmers live in the buffer zone of the El Triunfo biosphere reserve where organic coffee farming is one of the few sanctioned activities in the delicate cloud forest habitat. We have been working with for several years and are excited about this newest crop. Full body, low acidity. Maple sugar sweetness, molasses, and apricot.

    Colombia – Tolima

    Grown in the high mountains of central Colombia, this is an easy love. The Asprasar cooperative has achieved several certifications including: organic, NOP, EU, Jas, FLO, Rainforest Alliance, UTZ, and Manos de Mujer. With 91 members and two quality control laboratories at their collection points, this coop is focused on high quality coffees.

    Though not a dark roast this coffee that has inherently dark, heavy tones. It is very full-bodied and has a rustic silkiness, akin to well sorted lodge in the remote forest. Milk chocolate, black berry, and a hint of tamarind with a mild stone fruit acidity.
